Delish hand stretched noodles, appetising sides, so so skewers Newly opened. It's about one month old. Did a takeaway on a wet cold day, and the noodle soup hits the spot right on. Ordered an original broth and one with suan cai. Both were good but I prefer the original. Broth was delightfully appetising, full of umami yet light enough not to be overwhelming. Saltiness was to my liking. The hand stretched noodles was really good. It retained it's qq-ness despite a takeaway. Meat portion were generous too, and was tasty. Selected chicken and picked bamboo and mushroom. The former was ok, the latter is well pickled, crunchy and very appetising. Skewers were so so. Had the chicken, beef, tendon and tripe. Meats were tender, and large compared to other skewers I have had, but taste could do with more spices. And it's expensive too... A better value if ordered as a set with the noodles. Individual skewer is $3++ for ONE skewer. Place is bright and well air conditioned. Service is also welcoming and well oiled. Will definitely return to dine in and watch the noodle chef at work.

The handmade noodle itself is 5/5 for soup base. But idk why The fried noodles chicken is very normal like those of economic noodle stall. Lack bell chill or similar to Jiangxi fried beehoon. And it not worth $15+. Take away used many plastic containers. Overall the price for two pax $30+ sial.

I went with the Signature Beef Noodles and was a bit stuck on which noodle type to pick, but the staff recommended the Erxi (thicker round noodles) as their most popular choice, so I went with that. The soup was very clean-tasting and not gamey at all, which was great. I asked for less chili, which really let the natural beefy sweetness shine through. They are also quite generous when topping off the noodles with green onions, leeks, and coriander, which made the broth even more aromatic and refreshing. The daikon was also crunchy and had soaked up all that beefy goodness. Since the Hui people are famous for their skewers, I had to try some on the side. The mutton skewers were juicy with a nice kick of cumin and chilli, while the beef tendon had good flavour and a melt-in-your-mouth texture. Prices here are a bit on the steep side (about $3 for a single skewer), but the quality is definitely there.

Nice place. 1 chef, noodles are cooked freshly. the beef slices are alright, but the soup is very nice. The skewers is alright. I prefer the chicken instead of the mutton and beef. Thick chunks of meat.
